Teff or Taf is an annual grass native to Ethiopia. Teff is high in dietary fiber and iron and provides protein and calcium. It is similar to millet and quinoa in cooking, but the seed is much smaller. It is actually the world's smallest grain; one kernel is about the size of a poppy seed.

Teff has a high level of lysine, the amino acid that our bodies use to maintain muscle tissue.
